Faire défiler la pageTwo of our students are candidates for the French regional selections to represent their zone at the Young Talents Escoffier Competition, Anaïs Esteve and Ivan Uzel. Anaïs is a student in Bachelor in International Culinary Arts Management and Ivan is studying in Bachelor in International Food Service Management.
“The Young Talent Escoffier” competition is a national and international gastronomy meetings highlighting young people under 25. The competition is characterized by its diversity : a kitchen and a service category represented by a team of two people.
We have met our two candidates about their participation :
Could you please introduce yourself and your background ?
Anaïs : « I am a 1st-year student in Bachelor in International Culinary Arts Management. Before that I was studying in a professional baccalaureate at the Lycée Hôtelier de Toulouse. That programme was split between theoretical lessons, on-field practises and internships. I’ve worked in several gastronomic restaurants et Michelin-starred restaurants. »
Ivan : « At first, I have joined the Institut Paul Bocuse in Bachelor in International Hospitality Management and in 2nd-year I have switched to join the Bachelor in International Food Service Management. I have applied to the Institut Paul Bocuse after my baccalaureate while I was still looking for what I wanted to do. Thanks to the programme and subjects I studied here, my passion for the Food Service industry is still growing every day. »
Why have you chosen to participate in this prestigious competition ?
Anaïs : « I have always loved the adrenaline of the competition and facing new challenges. As soon as I heard from that competition by my teachers, I signed in. »
Ivan : « Teachers from the Institut Paul Bocuse came to see me and proposed me to sign for the competition. I had doubts at first, but they succeeded in motivating me, encouraging me, supporting me and trusting me. This is thanks to all of this that today with Anaïs we share a great connection to take up this challenge. »
What has been the hardest in this competition ?
Anaïs : « Personally, I would have never thought that it would have been such an intense adventure, but I’ve learnt so much ! »
Ivan : « Juggling from preparing the competition and the exams for my Bachelor was the hardest for me. »
What have you learn during this competition ?
Anaïs : « Culinary speaking and thanks to the trainings and the coaches, I feel like my knowledge about products, techniques and organisation improved a lot. The feedbacks and tips we received from the Chefs were so numerous and useful to me that it forces us to learn more and more. »
Ivan : « Working alongside with professionals is a real source of motivation and dedication. They feed us with their knowledge and help us to grow at a professional and a personal level. »
What is the key success factor according to you ?
Anaïs : « I would say teamwork, communication and cohesion ! We learn about each other every day. Listening and helping each other are essential values. »
Ivan : « Same thing for me, I would just add organisation. In this kind of competition, there is a tone of work to complete and being organised, listening to each other and understand the other are key. »
if you had to do it again, what would you change ?
Anaïs : « Honestly… not much. This is an extraordinary human and professional experience. I am very proud to have signed in and I think we’ve done our best with Ivan to succeed. We worked a lot and we hope hope for the best ! »
Ivan : « We can always improve things. For me, this is hard to reach something we are 100% proud of. We always want to modify things to our creation to improve it or make it a bit more alive.
Today, I am proud of one thing : the bond we have created with Anaïs. And this is the most crucial challenge in this competition.
If we are selected to represent our zone in the national competition, we will have to work even more in order to get even more knowledge and techniques. »
Anais and Ivan are they going to join Marielou Le du and Théodore Martignogni Lauréats of the “Sélection Régionale Lyon-Bourgogne-Alpes 2019” ? Yes they are ! Since the 17th of May 21, they have received the good news and they have been qualified.
