Following an outstanding journey of excellence and a final held to the highest standards in Bordeaux, Joannic Taton, Executive Pastry Chef at Institut Lyfe, was awarded the prestigious title on Wednesday 14 October 2026. This exceptional distinction crowns months of intensive training, unwavering commitment and a shared pursuit of excellence.
From 49 candidates to the coveted tricolour collar
A total of 49 candidates entered this edition of one of the most selective competitions in the profession. Following a demanding qualification process, only 16 finalists earned the opportunity to compete in the final round at the CFA des Compagnons du Devoir et du Tour de France in Bordeaux.
The candidates faced an outstanding panel of judges, chaired by Philippe Segond (President of the Pastry and Confectionery section) and Emmanuel Serna (President of the Overall Jury). Their work was assessed on technical mastery, precision of execution, creativity and the quality of their creations.
A meticulous technical and creative showcase inspired by the theme “In Search of Lost Time”
Over 28 hours of competition spread across three intense days, the finalists were required to demonstrate the full extent of their technical, culinary and artistic expertise through a series of complex creations:
- Travel cake and chocolate cake
- A “Simply Vanilla” mille-feuille
- Croquembouches filled with hazelnut praline cream, alongside sweet petits fours
- Plated restaurant dessert creations featuring apple, quince and floral notes
- Artistic showpieces: one masterpiece and one sugar sculpture
The theme gave Joannic the opportunity to showcase the full breadth of his technical and artistic virtuosity, from working with sugar and chocolate to crafting exquisite tasting creations.

The culmination of teamwork and a shared vision
This victory also reflects a set of shared values: pushing boundaries, maintaining the highest standards and passing on expertise. It is the result of a long-term preparation process carried out in the Institut Lyfe laboratories, with the support of the school’s entire community of chef instructors.
This distinction marks a major milestone in the career of an exceptional pastry chef, whose talent is demonstrated every day at Institut Lyfe through his educational work and his commitment to sharing his expertise with students on the Bachelor’s Degree in International Pastry Management.
“Supporting our students, as well as our professionals, in the competitions they choose to undertake is at the heart of our mission. Our role is to provide them with the best possible conditions and guide them so that they can give their very best. This is our collective commitment to excellence,” says François Mary, Managing Director of Institut Lyfe.
