Institut Lyfe launches ‘Salon Héritages’: a new applied-training

Faire défiler la pageInstitut Lyfe, France’s premier institution for culinary arts, pastry and hospitality management, unveils today, Thursday 12 March, the Salon Héritages — a dedicated space for the dialogue between wine, cheese and the craft of hospitality, serving as a new hands-on learning environment for its students. An integral part of the Michelin-starred restaurant-school Saisons, it invites guests to extend their gastronomic journey in an intimate setting where expertise, mentorship, and experimentation converge.
At the heart of this project: two defining signatures
The wine selection was conceived by Gaëtan Bouvier (Meilleur Ouvrier de France Sommellerie 2022), while the cheese menu was curated by Christian Janier (Master Cheesemonger, Meilleur Ouvrier de France 2000). Here, wine does more than just pair — it engages. Cheese responds in kind. A selection of twenty fortified wines (Port, Banyuls, Madeira) will accompany a rotating selection of nine cheeses.
A real-world training ground for tomorrow’s talent
True to Institut Lyfe’s educational mission, Salon Héritages provides a new immersive laboratory for students of the Bachelor in international hotel and restaurant management. During their rotations at Saisons, they will hone their skills in service, personalised guest relations, sales and product knowledge, working directly with discerning guests and exceptional products.
Through this new venue, Institut Lyfe continues its ambition: to bridge professional excellence, the passing on of expertise, and the exploration of new culinary and oenological horizons.
Extending the Saisons experience: a lounge where tasting becomes a journey

Set in a refined atmosphere of leather and wood, the salon brings guests closer to the product. Diners from the Michelin-starred Saisons can select their cheeses and accompaniments at a central counter, guided by the service team, with each portion cut to order. Every wine is matched to a specific family of cheeses to complete the immersion. A thoughtful selection of fortified wines from Banyuls, Madeira and Port has also been curated for the experience.
The Salon Héritages also welcomes guests before or after their meal to enjoy a glass, discover an exceptional cheese selection, or simply linger over a shared moment. This intimate and elegant space invites visitors to slow down and celebrate the finest local terroir.
A vibrant venue dedicated to craftsmanship and conviviality
Throughout the year, Salon Héritages will host workshops and events centred on the art of the bar and tasting: cocktails, digestifs, wine and cheese pairings, and masterclasses with leading experts. These events will make the salon a vibrant, open space for exploring artisanal traditions and the pleasures of the table.
A boutique cellar for enthusiasts

This refined setting also offers a selection of wines available for purchase at cellar prices. Visitors can take the experience home or explore wines selected with the utmost care by the sommelier team. The collection features 35 wines, including Champagne Apanage Blanc de Blancs from Pommery (created for the house’s 150th anniversary), Taburnum 2023 from Les Vins de Vienne, Landonne 2010 from Domaine Rostaing Côte-Rôtie, and Taylors Select Ruby Port.
