Faire défiler la pageInstitut Lyfe, the internationally renowned school for Culinary Arts, Pastry, and Hospitality Management, is launching its Bachelor in International Pastry Management, a 100% English-taught, and inaugurating its new Pastry Academy. This space is dedicated to learning, knowledge-sharing, and innovation and is complemented by a strategic partnership with Dalloyau.
A Pastry Academy: A hub of innovation serving a heritage of excellence
This new academy represents a true center of excellence dedicated to training the talents of tomorrow, offering an exceptional learning environment for all the pastry-related professions. With state-of-the-art laboratories spanning 1,000 square meters, it will eventually train more than 400 aspiring pastry chefs.
These spaces, equipped with the latest technologies, will provide students—guided by a team of 12 pastry chef instructors from prestigious establishments—with the best conditions to refine their skills, encourage creativity, and explore every facet of classic and contemporary pastry-making, as well as chocolate-making, ice cream making, confectionery, and sugar art.
Supported by the generous contributions of the Fondation Institut Lyfe and public authorities, notably the Auvergne-Rhône-Alpes Region, the Greater Lyon Metropolis, and the City of Lyon, as well as committed equipment partners (ARAVEN, DE BUYER, DITO SAMA, EPACK PRO, RONDO, SELMI, UNOX), these facilities offer 80 workstations.
More than just a learning space, this academy aims to be a dynamic hub for exchange and knowledge-sharing, open to professionals, students, and informed enthusiasts, with:
- Meetings and masterclasses led by renowned pastry chefs sharing their passion, such as Yann Couvreur, Jonathan Mougel, Florence Lesage, François Perret, and Marie Simon.
- The promotion and support of young talents in the most prestigious competitions with a dedicated team.
- Continuing education programs offering professionals training in topics such as rational pastry-making, vegan pastry, and emerging international trends.
An international ambition: The launch of an English-taught Bachelor’s degree
In September 2025, Institut Lyfe will launch a Bachelor’s in International Pastry Management, taught entirely in English, complementing the original French Bachelor’s program launched in 2021.
This program targets both international students eager to discover and master the art of French pastry and French students who wish to follow an English curriculum, thus broadening their global perspective.
An exceptional partnership with Maison Dalloyau
To promote high-end French pastry, Institut Lyfe is partnering with the prestigious Maison Dalloyau, founded in 1682 and the creator of the legendary Opéra cake. This partnership symbolizes a meeting of heritage and modernity, expressed through:
- Regular contributions from Dalloyau’s master pastry chefs to share their expertise and transmit the secrets of pastry-making.
- Dedicated competitions where students will have the opportunity to take on creative challenges inspired by Dalloyau’s history and iconic creations, fostering their artistic development.
- Creativity sessions enabling students, chef instructors, and Dalloyau teams to collaborate on imagining the pastries of tomorrow, combining tradition and modernity.
- Joint participation in prestigious events, enhancing their mutual visibility and influence.
- Employment opportunities: Dalloyau becomes a privileged corporate partner, offering unique career prospects to future graduates.
“The inauguration of this Pastry Academy marks a major milestone in our mission to pass on the excellence of French know-how. It will be a meeting place for exchange and knowledge-sharing. By welcoming students who can combine technical expertise, creativity, and entrepreneurial vision, as well as artisans and experienced chefs, the Academy aims to become an international hub for pastry-making, promoting excellence at every level“
