Faire défiler la page Students on the Bachelor degrees in Culinary Arts Management and International Hospitality Management have once again had shining results in 4 different competitions thanks to their creativity and talent.
Representing the Bachelor’s in International Hospitality Management, Serena Chavallay recently won 1st prize in the French Hotel & Catering Directors’ Club competition. For this 17th edition, the candidates were asked to define the strategic and marketing positioning of the “children” segment of a 5-star hotel located on Lac Leman, as well as the food-service concept, the human resources policy and a suitable approach to CSR. Serena found this project extremely rewarding, saying that she “had learnt a lot from an experience that was both stimulating and motivating.”
Louis Dupuy-Roudel, who is studying on the Bachelor’s in Culinary Arts Management, has come first in the 2019 Professional Aoste chef competition. Under the patronage of the Michelin-star chef Christian Têtedoie, Louis gave an excellent performance on the theme of “tapas, vol-au-vents and appetizers: charcuterie is for sharing!”.
As for his classmate Vincent Bigioni Tixier, working in a pair with an Irish student, he has won the Dairy Chef competition organised by the French Embassy in Ireland. Vincent created a menu composed of a starter, main course and dessert that featured dairy products from both countries.
To round off this amazing performance, Marielou Le du and Théodore Martignogni, respectively in the second year of Culinary Arts and the first year of Food Service Management gave a fantastic demonstration of their skills in the kitchen and in the dining room on the theme of Bresse Poultry / Crayfish / Foie Gras. Winners of the Lyon-Burgundy-Alps qualifiers at the Escoffier Young Talent competition, we now wish them the very best in reaching the national grand finale.
